Method
- Preheat oven to 200°C (400°F)
- Toss diced potatoes with olive oil, salt, and pepper
- Spread on a baking tray and roast for 20–25 minutes until crispy
- In a pan, cook ground meat until browned
- Add taco seasoning and stir well
- Divide roasted potatoes into bowls
- Top with seasoned meat, cheese, sour cream, salsa, and lettuce
- Garnish with green onions and serve
