Loaded Taco Tater Tot Casserole

This loaded taco tater tot casserole is a bold, cheesy comfort dish packed with Tex-Mex flavors. Seasoned ground beef, melted cheese, and crispy golden tater tots create a fun twist on classic tacos. It’s easy to make, family-friendly, and perfect for busy weeknight dinners.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup canned black beans drained
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 bag frozen tater tots about 32 oz
  • ½ cup diced onion
  • ½ cup corn kernels

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. In a skillet cook ground beef and diced onion over medium heat until browned.
  3. Drain excess grease and stir in taco seasoning and salsa.
  4. Add black beans and corn and mix well.
  5. Spread the beef mixture evenly into the prepared casserole dish.
  6. Sprinkle cheddar and Monterey Jack cheese over the beef layer.
  7. Arrange frozen tater tots evenly on top.
  8. Bake for 30–35 minutes until the tater tots are golden and crispy.
  9. Serve warm with optional toppings like sour cream, jalapeños, or chopped cilantro.

Notes

  • Add diced tomatoes or green chilies for extra flavor.
  • Pepper Jack cheese works great for a spicy kick.
  • Let the casserole rest for a few minutes before serving.
  • Store leftovers in the refrigerator for up to 3 days.
