These Mini English Muffin Breakfast Pizzas are quick, cheesy, and perfect for busy mornings. Ingredients
  

  • 3 English muffins split in halves
  • 4 eggs
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/4 cup cooked sausage or bacon optional
  • 1/4 cup diced bell peppers
  • 2 tbsp milk
  • Salt and black pepper to taste
  • 1 tbsp butter or oil

Method
 

  1. Preheat oven to 180°C (350°F) and place muffin halves on a baking tray.
  2. In a bowl, whisk eggs, milk, salt, and pepper.
  3. Heat butter in a pan and scramble eggs until just set.
  4. Spoon scrambled eggs onto each muffin half.
  5. Add sausage or bacon and bell peppers on top.
  6. Sprinkle cheese evenly over each pizza.
  7. Bake for 8–10 minutes until cheese melts.
  8. Serve warm and enjoy.

Notes

  • Toast muffins slightly before adding toppings for extra crunch.
  • Customize toppings with veggies or different meats.
  • Use pre-cooked eggs for faster prep.
  • Best served fresh and hot.
