Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup unsalted butter melted
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh apricots chopped
  • 2 tablespoons brown sugar for topping
  • Powdered sugar for dusting optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease and line an 8-inch round cake pan.
  3. In a bowl, whisk flour, sugar, baking powder, and salt.
  4. In another bowl, mix eggs, melted butter, milk, and vanilla extract.
  5. Pour wet ingredients into dry ingredients and mix until just combined.
  6. Gently fold in chopped apricots.
  7. Pour batter into prepared cake pan.
  8. Sprinkle brown sugar evenly on top.
  9. Bake for 35–40 minutes until a toothpick inserted comes out clean.
  10. Cool completely before slicing.
  11. Dust with powdered sugar before serving if desired.

Notes

  • Use ripe but firm apricots for the best texture.
  • Do not overmix the batter to keep the cake soft.
  • Add sliced almonds on top for extra crunch.
  • Store in an airtight container for up to 3 days.
