Method
- In a bowl mix diced peaches, brown sugar, cinnamon, and lemon juice.
- Place an egg roll wrapper on a flat surface.
- Spoon a small amount of the peach mixture into the center.
- Fold the sides and roll tightly into an egg roll shape.
- Heat oil in a skillet or fryer to about 350°F (175°C).
- Fry egg rolls for 3–4 minutes until golden and crispy.
- Remove and drain on paper towels.
- Sprinkle with powdered sugar before serving.
- Serve warm with vanilla ice cream if desired.
Notes
- Add cream cheese to the filling for a creamy twist.
- Air fry at 375°F (190°C) for about 8 minutes for a lighter version.
- Use ripe, fresh peaches for the best flavor.
- Store leftovers in the refrigerator for up to 2 days.
