This Peach Watermelon Salad is ultra-refreshing, juicy, and perfect for hot summer days. Ingredients
  

  • 3 cups watermelon cubed, seedless
  • 2 ripe peaches sliced or cubed
  • 1/4 cup red onion thinly sliced, optional
  • 2 tbsp fresh mint chopped
  • 1 tbsp fresh lime juice
  • 1 tbsp honey optional
  • 1 tbsp olive oil optional
  • Pinch of salt
  • 1/4 cup crumbled feta optional, for salty contrast

Method
 

  1. Cube watermelon and slice peaches into bite-sized pieces.
  2. Add watermelon, peaches, and red onion to a large bowl.
  3. Drizzle with lime juice, honey, and olive oil if using.
  4. Sprinkle with salt and gently toss to combine.
  5. Top with fresh mint and feta if desired.
  6. Chill 15–30 minutes before serving for best flavor.

Notes

  • Use firm-ripe peaches, so they hold their shape in the salad.
  • Pat the watermelon dry witha paper towel to avoid excess liquid.
  • Add cucumber or blueberries for extra texture and color.
  • Best served fresh, but can be refrigerated up to 1 day.
