Peanut Butter Jelly Muffins Recipe

Peanut Butter Jelly Muffins are soft, fluffy, and filled with nostalgic flavor in every bite. Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup creamy peanut butter
  • ½ cup vegetable oil
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • ½ cup grape or strawberry jelly
  • ¼ cup chopped peanuts optional

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. In another bowl, mix eggs, peanut butter, oil, milk, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Fill each muffin cup halfway with batter.
  6. Add 1 teaspoon jelly to the center of each muffin.
  7. Top with remaining batter until cups are ¾ full.
  8. Sprinkle chopped peanuts on top if using.
  9. Bake for 18–20 minutes until golden and set.
  10. Cool in pan for 5 minutes before transferring to a wire rack.

Notes

  • Do not overmix to keep muffins tender.
  • Use any favorite jam flavor.
  • Warm slightly before serving for gooey centers.
  • Store in an airtight container for up to 3 days.
