Ingredients
  

  • 12 Oreo cookies
  • 2 cups vanilla ice cream slightly softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 2 tablespoons crushed Oreos for coating edges

Method
 

  1. Separate the Oreo cookies into halves while keeping the cookie pieces intact.
  2. In a bowl mix peanut butter, powdered sugar, and vanilla extract until smooth.
  3. Spread a thin layer of the peanut butter mixture onto the inside of each Oreo half.
  4. Scoop a small amount of softened vanilla ice cream onto one Oreo half.
  5. Place another Oreo half on top to create a sandwich.
  6. Gently press the sandwich together so the ice cream spreads evenly.
  7. Roll the edges of the ice cream in mini chocolate chips and crushed Oreos.
  8. Place the sandwiches on a tray lined with parchment paper.
  9. Freeze for about 2 hours until firm.
  10. Serve straight from the freezer for the best texture.

  • Slightly soften the ice cream so it spreads easily without melting.
  • Freeze sandwiches individually on a tray before storing them together.
