Pineapple Chicken Tacos with Tangy Slaw

Ingredients
  

  • 2 cups cooked chicken shredded or grilled
  • 8 small tortillas
  • 1 cup pineapple chunks
  • 2 cups shredded cabbage
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/4 cup fresh cilantro chopped
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Heat olive oil in a pan and lightly cook pineapple until caramelized
  2. Add chicken, chili powder, salt, and pepper and heat through
  3. In a bowl, mix cabbage, mayonnaise, lime juice, honey, and cilantro
  4. Warm tortillas in a pan
  5. Fill tortillas with pineapple chicken mixture
  6. Top with tangy slaw
  7. Serve immediately and enjoy
