Ingredients
  

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 6 pineapple rings
  • 1/4 cup brown sugar
  • 2 tbsp butter for caramelizing

Method
 

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients until smooth batter forms.
  4. Heat a pan and melt butter with brown sugar.
  5. Place pineapple rings in the pan and cook until caramelized.
  6. Pour pancake batter over each pineapple ring.
  7. Cook until bubbles form, then flip and cook the other side.
  8. Serve warm with extra syrup if desired.

Notes

  • Use canned or fresh pineapple rings.
  • Cook on medium heat to avoid burning sugar.
  • Add cherries for classic upside-down style.
  • Serve immediately for best flavor and texture.
