Pistachio Muffins: A Nutty Treat

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1/2 cup finely ground pistachios
  • 3/4 cup sugar
  • 1/2 cup butter melted
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chopped pistachios for topping

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tray.
  2. In a bowl, mix flour, ground pistachios, baking powder, and salt.
  3. In another bowl, whisk eggs, sugar, butter, milk, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Divide batter into muffin cups.
  6. Sprinkle chopped pistachios on top.
  7. Bake for 18–20 minutes until golden and set.
  8. Let cool slightly before serving.

Notes

  • Do not overmix the batter for fluffy muffins.
  • Use fresh pistachios for the best flavor.
  • Add a glaze for extra sweetness if desired.
  • Store in an airtight container for freshness.
