Pumpkin Chocolate Chip Muffins

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3/4 cup chocolate chips

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tray.
  2. In a bowl, whisk pumpkin puree, sugars, oil, eggs, and vanilla.
  3. In another bowl, mix flour, baking soda, baking powder, spices, and salt.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in chocolate chips.
  6. Divide batter into muffin cups.
  7. Bake for 18–20 minutes until a toothpick comes out clean.
  8. Let cool slightly before serving.

Notes

  • Do not overmix the batter for soft muffins.
  • Use pure pumpkin puree, not pie filling.
  • Add nuts for extra texture if desired.
  • Store in an airtight container for freshness.
