Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter softened
  • 1 can 15 oz pumpkin puree
  • ¾ cup evaporated milk
  • 2 large eggs
  • ¾ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9x13-inch baking pan.
  3. In a bowl, mix flour, granulated sugar, and softened butter until crumbly.
  4. Press mixture firmly into the bottom of the pan.
  5. Bake crust for 15 minutes until lightly golden.
  6. In another bowl, whisk pumpkin puree, evaporated milk, eggs, brown sugar, spices, salt, and vanilla extract.
  7. Pour pumpkin mixture evenly over baked crust.
  8. Bake for 30 minutes until filling is set.
  9. Cool completely before slicing into bars.

Notes

  • Chill for 1–2 hours for cleaner slices.
  • Add whipped cream before serving.
  • Use pumpkin pie spice instead of individual spices if preferred.
  • Store refrigerated for up to 4 days.
