Quick Pesto Pasta Salad

A fast, fresh, and flavorful pasta salad tossed in aromatic basil pesto with simple ingredients. Perfect for busy days, this easy dish comes together in minutes and delivers a light yet satisfying meal or side.

Ingredients
  

  • 2 cups pasta penne or fusilli
  • 1/2 cup basil pesto
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup grated parmesan cheese
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp lemon juice
  • 1/4 cup fresh basil chopped

Method
 

  1. Cook pasta according to package instructions then drain and cool completely
  2. In a large bowl combine cooked pasta cherry tomatoes and basil
  3. Add pesto olive oil and lemon juice then toss until evenly coated
  4. Sprinkle parmesan cheese and mix well
  5. Season with salt and black pepper to taste
  6. Chill for 10-15 minutes before serving

Notes

  • Add mozzarella balls or olives for extra flavor
  • Use store-bought or homemade pesto as preferred
  • Best served chilled for enhanced taste
  • Store in fridge for up to 2 days
