Ingredients
  

  • 3 cups rotisserie chicken shredded
  • 1 box stuffing mix about 6 oz
  • 1 cup chicken broth
  • 1 can cream of chicken soup
  • ½ cup sour cream
  • 1 cup frozen mixed vegetables
  • ½ cup shredded cheddar cheese
  • 2 tablespoons butter melted
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. In a large bowl mix shredded rotisserie chicken, frozen vegetables, cream of chicken soup, sour cream, garlic powder, onion powder, and black pepper.
  3. Spread the chicken mixture evenly into the prepared casserole dish.
  4. In another bowl combine stuffing mix with chicken broth and melted butter.
  5. Stir the stuffing mixture until moistened.
  6. Spread the stuffing evenly over the chicken mixture.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Bake the casserole for 30–35 minutes until heated through and the top is golden.
  9. Let the casserole rest for 5 minutes before serving.
  10. Garnish with chopped parsley.

Notes

  • Add mushrooms or diced celery for extra flavor.
  • Use leftover turkey instead of chicken for a holiday-style meal.
  • For a crispy topping, bake uncovered during the entire cooking time.
  • Serve with a side salad or roasted vegetables.
