Salsa Verde Pepper Jack Chicken Recipe

Ingredients
  

  • 4 chicken breasts
  • 1 cup salsa verde
  • 1 cup pepper jack cheese shredded or sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh cilantro chopped

Method
 

  1. Preheat oven to 190°C (375°F)
  2. Rub chicken with olive oil, garlic powder, cumin, salt, and pepper
  3. Place chicken in a baking dish
  4. Pour salsa verde evenly over chicken
  5. Bake for 20 minutes
  6. Remove from oven and top with pepper jack cheese
  7. Return to oven and bake for 5 more minutes until cheese melts
  8. Garnish with cilantro and serve warm

Notes

  • Use homemade salsa verde for fresher flavor
  • Add jalapeños for extra heat
  • Serve with rice, tortillas, or salad
  • Do not overcook to keep chicken juicy
  • Great for meal prep and leftovers
