Ingredients
  

  • 6 eggs
  • 1/2 lb 250g breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • 1/2 cup bell peppers chopped
  • 1/4 cup onion chopped
  • 1 tablespoon butter or oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions for garnish

Method
 

  1. Heat butter in a skillet over medium heat
  2. Cook sausage until browned and fully cooked
  3. Add onion and bell peppers and sauté until soft
  4. In a bowl, whisk eggs, heavy cream, salt, and pepper
  5. Pour eggs into skillet and scramble until cooked
  6. Stir in shredded cheese until melted
  7. Divide mixture into bowls
  8. Garnish with green onions and serve warm

Notes

  • Use spicy sausage for extra flavor
  • Add spinach or mushrooms for variety
  • Do not overcook eggs to keep them fluffy
  • Great for meal prep (store without garnish)
  • Reheat gently for the best texture
