Sheet Pan Chicken Pitas Recipe

These Sheet Pan Chicken Pitas are a simple, crowd-pleasing meal packed with juicy roasted chicken and colorful veggies. Everything cooks on one pan for easy cleanup, then gets tucked into warm pita bread for a fresh, flavorful bite. Perfect for gatherings or quick dinners.

Ingredients
  

  • 500 g chicken breast sliced
  • 4 –6 pita breads
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 red onion sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup yogurt or tzatziki sauce

Method
 

  1. Preheat oven to 200°C (400°F)
  2. In a bowl, mix olive oil, garlic, paprika, oregano, salt, and pepper
  3. Toss chicken and vegetables in the mixture
  4. Spread everything on a sheet pan in a single layer
  5. Bake for 20–25 minutes until chicken is cooked and veggies are tender
  6. Warm pita breads in oven or pan
  7. Fill pitas with chicken and roasted veggies
  8. Add yogurt or tzatziki sauce and serve

Notes

  • Do not overcrowd the pan for even roasting
  • Use chicken thighs for extra juiciness
  • Add lettuce or tomatoes for freshness
  • Serve with extra sauce on the side
  • Perfect for parties or casual dinners
