Ingredients
  

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar for rolling

Method
 

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat the butter and sugar until light and fluffy.
  4. Mix in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  5. Gradually add the dry ingredients and mix until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough and roll each ball in the extra granulated sugar.
  7. Place the dough balls on the prepared baking sheets about 2 inches apart.
  8. Bake for 9–11 minutes until the edges are lightly set and the centers remain soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Allow the cookies to cool completely before serving or storing.

  • Use freshly squeezed lemon juice and zest for the brightest flavor.
  • Avoid overbaking to keep the cookies soft and tender.
