Traditional British Homemade Jammie Dodgers are classic buttery sandwich cookies filled with sweet raspberry jam. Ingredients
  

  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • ¾ cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup raspberry jam
  • Powdered sugar for dusting optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a bowl, beat butter and powdered sugar until light and creamy.
  3. Mix in vanilla extract and salt.
  4. Gradually add flour and mix until a soft dough forms.
  5. Roll dough out to about ¼-inch thickness.
  6. Cut cookies into rounds using a cookie cutter.
  7. Cut small heart shapes in the center of half of the cookies.
  8. Place cookies on prepared baking tray.
  9. Bake for 10–12 minutes until lightly golden.
  10. Cool completely before assembling.
  11. Spread raspberry jam on whole cookies and top with heart-cut cookies.

Notes

  • Chill the dough for 15 minutes if it becomes too soft.
  • Use strawberry jam as an alternative filling.
  • Dust with powdered sugar for a bakery-style finish.
  • Store in an airtight container for up to 4 days.
