Twice Baked Potato Casserole Recipe

This twice baked potato casserole is creamy, cheesy, and packed with classic loaded potato flavors. Fluffy mashed potatoes mix with butter, sour cream, and melted cheese, then bake until golden and irresistible. It’s the perfect comfort-food side dish for family dinners, holidays, or potlucks.

Ingredients
  

  • 4 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup butter melted
  • ½ cup milk
  • ½ cup cooked bacon crumbled
  • 2 green onions chopped
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ¼ tsp salt

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl combine mashed potatoes, sour cream, melted butter, and milk.
  3. Add garlic powder, salt, and black pepper and mix until smooth.
  4. Stir in half of the cheddar cheese, bacon, and green onions.
  5. Spread the potato mixture evenly in the prepared baking dish.
  6. Sprinkle remaining cheddar cheese on top.
  7. Bake for 25–30 minutes until hot and bubbly.
  8. Garnish with extra bacon and green onions before serving.

Notes

  • Use leftover mashed potatoes for a quick preparation.
  • Add cream cheese for an extra creamy texture.
  • Let the casserole sit for 5 minutes before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
