- Preheat oven to 180°C (350°F) and line a baking tray
- Melt mozzarella and cream cheese together until smooth
- Stir in almond flour, egg, baking powder, Italian seasoning, garlic powder, and parmesan
- Mix until a soft dough forms
- Fold in pepperoni slices evenly
- Roll dough into small balls and place on tray
- Lightly flatten each bite
- Bake for 12–15 minutes until golden and slightly crispy
- Let cool slightly before serving

- Use finely shredded mozzarella for smooth dough
- Wet hands to prevent sticking while shaping
- Add chili flakes for a spicy kick
- Serve with low-carb marinara for dipping
