Ingredients
  

  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons cream cheese softened
  • 3/4 cup almond flour
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 cup mini pepperoni slices
  • 1/4 cup grated parmesan cheese

Method
 

  1. Preheat oven to 180°C (350°F) and line a baking tray
  2. Melt mozzarella and cream cheese together until smooth
  3. Stir in almond flour, egg, baking powder, Italian seasoning, garlic powder, and parmesan
  4. Mix until a soft dough forms
  5. Fold in pepperoni slices evenly
  6. Roll dough into small balls and place on tray
  7. Lightly flatten each bite
  8. Bake for 12–15 minutes until golden and slightly crispy
  9. Let cool slightly before serving

Notes

  • Use finely shredded mozzarella for smooth dough
  • Wet hands to prevent sticking while shaping
  • Add chili flakes for a spicy kick
  • Serve with low-carb marinara for dipping
  • Best enjoyed warm and fresh
